What is UBE?

UBE is a purple yam originally from the Philippines. This vibrant purple sweet potato has a sweet yet mellow taste, with a nutty and vanilla flavor. It's popularly used in Filipino cuisine, either mashed with condensed milk to make jam, or used in savory dishes as well. Any desserts with ube in it are heavenly!
